Wellness Wednesday| Gluten Free Waffles
Tim Hightower is starting off our Wellness Wednesdays with a killer waffle recipe you're going to love.

Ingredients:
1½ cups blanched almond flour
¾ cup arrowroot starch or tapioca starch
¼ cup coconut flour
1 teaspoon baking soda or 4 teaspoons baking powder (aluminum-free)
¼ cup date syrup or coconut sugar
½ teaspoon sea salt
3 large eggs
¼ cup coconut oil, melted
1 cup nondairy milk
1 tablespoon lemon juice
1 teaspoon vanilla
1 teaspoon cinnamon
¼ cup unsweetened applesauce
2-3 drops Lemon essential oil (http://bit.ly/2JemCtZ)
Instructions: 1. Preheat your waffle iron. 2. Combine all the ingredients and gently mix and combine—it's fine if a few lumps are left. 3. Using a ladle, scoop the batter into your hot waffle iron. 4. Cook your waffles according to the waffle makers' instructions. 5. Serve immediately—or cool on a wire rack so that they stay crisp (cooled waffles can be frozen and reheated in the toaster for quick breakfasts).
